So I've seen something similar in many cookbooks and on the gram and always thought that looks nice, I must give it a try and so glad I did. Here's the recipe:
21g of chorizo (I buy the slices as its 89p per pack so its 5 slices)
1 Spring onion
200ml (ish) of passata
1 Tbsp. of Tomato Puree
Fresh coriander - a pinch
Chilli - a pinch
Pepper - a pinch
Cook off the spring onion & chorizo then add the passata and tom purée, cook for a couple of minutes, then add the eggs, sprinkle over the chilli & coriander cover and let it simmer until the eggs are cooked but soft yolks.
It's low on carbs so i will have this on rest days or add a slice of toast if its a training day.
